Job description
Prep cooks perform food preparation duties in a commercial kitchen in support of the cooks. Duties include gathering, washing, breaking apart, cutting, measuring, portioning, and mixing ingredients in support of the cooks. The items prep cooks prepare will be simpler than that prepared by cooks and some may be served directly to customers while most will form part of more complex dishes prepared by cooks. The prep cook duties are performed by use of a combination of common kitchen tools including knives, measuring devices, scales, cutting boards, blenders, mixers and various types of containers and bowls. The prep cooks will be required to do some cooking and preparation of menu items in support of the head chef meaning prep cooks may be called upon to prepare a variety of foods, such as meats, vegetables, or desserts, according to customers’ orders or supervisors instructions, following approved procedures. In doing this type of food preparation work and cooking, the prep cooks will use pots, pans, stock pots, skillets, stove, and oven. Preparation of some items may not require cooking and instead be served raw or rely on time in a cooler or freezer before being ready to serve or being passed on to the cooks for additional preparation.
Special Requirements
Maintain professional appearance and proper uniform based upon Grand Traverse Resort and Spa policies and/or standards. The specific days and hours of work will vary depending on scheduling and the level of business at the resort but will generally be 5 days per week with rotating days off with 3 shifts available; 6:00 am to 1:00 pm; 12:00 pm to 8:00 pm or 2:00 pm to 11:00 pm. Split shifts are possible. Approximately 40 hours per week with some overtime. The business is open 7 days per week and weekends and holiday work will be required.
