Job description
Work within this job description does not include freezing of fish or work in and around employer’s freezer functions. All work within this job description will be performed on fresh fish that are used in further processing and freezing or that are shipped as “fresh, never frozen” fish. In all duties, employees must strictly adhere to all applicable food safety and sanitation requirements, including requirements of USDA Food Safety Inspection Service, Global Aquaculture Alliance’s Best Aquaculture Practices, USDA Process Verified Program for US Farm Raised Catfish Sustainability, and requirements of the customers and employer.
Grader/Sorter of Live Fish:
As different sizes of fish roll down the conveyer belt, the worker will pick the size to put on the head machine, which is then placed into the receptacle. Workers will place smaller fish into a pan that go to the manual head saw.
Sorter/Grader of Fillets:
As the fillets rotate down in the cold water vat chiller, the worker must place individual fillets on a conveyor belt that sizes the fillets.
Nugget/Fillet Inspector:
Worker must check the nuggets and fillets by visual and hands on inspections to be sure it is free of bones, bone fragments, skin, and/or any foreign matter. Workers will then pick up the nuggets and fillet and feel of it and look at it. Workers may have to trim the fish rid of any bones, bone fragments, skin, or foreign matter from the fillet or nugget.
Eviserator:
The eviserator picks up the fish and removes the intestines out of the fish.
Skinner:
The skinner lifts the fish from the conveyor belt and removes the skin from the fish.
Fillet Loader:
The loader places fish on a fish holder.
Special Requirements
Applicants must be 18 years or older. The company may conduct background checks on all new applicants at the employers expense. Three months experience in grading/sorting fish. All tools, supplies, and equipment will be provided at no cost to the worker. Proper attire is required. No cell phone usage during work hours. Cell phone can only be used during breaks and emergencies. Must have good hand/eye coordination, have ability to work well independently or in a team atmosphere. Must be able to understand and act on verbal communication. Must be able to work on a production line. Consistently practice and support all safety rules and guidelines. Ble flexible and assist in other areas of the company as needed/requested. Work area may consist of concrete floors, cold, noisy, wet, and damp surroundings and working in and out of coolers and freezers. Waterproof boots, uniforms, hair/beard nets are mandatory in designated areas, may have odors of fish.
