Job description
Prepare sushi and sashimi dishes according to established recipes and plating standards. Handle and portion seafood, including slicing, filleting, and cutting fish for sushi and sashimi. Ensure the freshness, quality, and proper storage of all seafood and ingredients. Follow recipes and plating guidelines to ensure consistency and accuracy. Maintain cleanliness and organization of the sushi station, including equipment, tools, and work surfaces. Follow all food safety and sanitation protocols, including proper handling and storage of ingredients. Ensure all products and prepared items are properly labeled, dated, initialed, covered, and rotated following FIFO (first in, first out). Collaborate with other kitchen staff to ensure efficient operations during service. Follow opening and closing procedures as instructed by kitchen management. Special Requirements
Must have a minimum one (1) year of experience as a Sushi Cook or related position. One (1) year of experience with sushi preparation techniques, including knife skills, seafood handling, and sushi rolling. Must have knowledge of different types of fish, seafood, and sushi ingredients, as well as sushi terminology and presentation styles.
