Job description
Duties may include: use of hands to peel crawfish and extract/remove crawfish tailmeat (the edible portion of the crawfish) from shell; clean/remove waste from crawfish tail; put crawfish on pallets; dump crawfish from sacks into water tank before processing; scoop crawfish on tables to be peeled; inspect crawfish tailmeat for defects; place crawfish tails in appropriate bag after peeling to be sold or consumed; load crawfish chiller with ice; ice down crawfish; place crawfish and/or tailmeat in cooler/freezer to preserve; follow/apply food safety regulations and maintain records, as needed; daily clean up and sanitize worksite. (No knives or sharp objects used in extracting the edible tailmeat from the shell)
Special Requirements
Manual dexterity of hands. Extensive sitting and/or standing. Must have two weeks (no months) of seafood experience. 
After initial 30 hours of processing, employee must be able to peel 4.52 pounds or more per hour. Employees unable to achieve the production standard stated in the contract will not be allowed to work over the minimum amount of hours offered. Employees producing lower than the production standard for an extended period of time with no improvement may be subject to job termination at the discretion of management.
May be subject to random drug screen upon hire paid by employer and/or a drug screen paid for by employer if reasonable suspicions arise during employment. This is a drug free work zone. Testing positive or failure to comply with a drug screen will result in termination for cause.
Must be able to work with cleaning chemicals required by food and safety regulations.
Must not be allergic to product and/or environment.
