Arrange Tables, chairs, decorations (which may include table cloths, napkin holders, signage, displays) are carried from one venue to another in the trailer. They would be moved by hand from the trailer and set up in the proper location, by hand. Items are not heavy (25 pounds or less) and can be moved by hand and set up without any tools. The dining area would be in close proximity to the food concessions stand. Attending duties are addressed below involving interactions with patrons while preparing and serving food items.
Funnel Cakes: Following instructions printed on the mix container, pour the mix plus appropriate liquid into the commercial batter blender. Once the batter has been blended, a portion is scooped into a dispenser bottle.
The deep fryer would contain cooking oil at the proper temp.
Worker would slowly pour batter from dispenser bottle into the fryer so that strings of batter would cling together, forming a funnel cake.
When one side of the funnel cake is brown, the worker would use a large slotted spoon to flip the half cooked funnel cake. When the funnel cake is fully cooked the worker would use the same large, slotted spoon to pick the funnel cake from the fryer, and place into a chafing dish under heat lamp.
When customer places order, worker would use tongs to place funnel cake into serving boat and add selected topping such as sugar, shipped cream, compote, chocolate sauce and/or Nutella ®, to the funnel cake and then provide the product to the customer.
Deep Fried Oreos: The same batter that was prepared for funnel cakes (above) would be used for deep fried Oreos ®.
Worker would pour banner into a small chafing dish. Oreos would be picked up by gloved hand, dropped into the banner to be coated, and then dropped into the hot oil of the deep fryer.
They would float to the surface, be scooped up with slotted spoon, and placed into a small chafing dish under heat lamp to allow the excess grease to drain while keeping the product at a proper serving temperature.
After customer places order, worker would use tongs to place Fried Oreos into serving boat and add selected topping such as sugar, shipped cream, compote, chocolate sauce and/or Nutella ®, to the Oreos and then provide the product to the customer.
Lemonade, On a cutting board, the lemons would be cut in half. See through plastic cups and lids would be brought from storage. A food service quality bin of ice with ice scoop would be placed into the work area.
Workers serving lemonade would stand at the front counter, communicating with the customer. After taking the order, would scoop ice into a cup, pick up (with gloved hand), and squeeze Lemon Juice into the cup, using a Squeezer. Pre-mixed sugar water would be poured into the cup, and then the product would be served with lid and straw to the patron after payment.

Perform variety of attending duties at mobile food concession. Arrange tables and decorations according to instructions. Communicate with customers regarding orders. Accept payment from customers. Serve food, beverages or desserts to customers. Prepare daily food items and cook simple foods and beverages using proper safety precautions and safety measures. Clean & organize eating, service, and kitchen areas. Perform cleaning duties to keep equipment and facilities sanatory.
