Gyros, Chicken Pita, Salads. The workers in this job category would stand in front of a line of hot & cold chafing dishes. Meat items would have been cooked in advance by the supervisor of the stand and cut by the supervisor into specific sized pieces (after they have been seasoned with oregano, marinated in a mixture of olive oil, lemon oil and other spices and then baked in an oven in advance) and placed into a hot chafing dish. Note that the preparation of the meat would NOT be handled by these workers. Toppings such as tomato and red onion would have been cut into small cubes by these workers using a common knife and chopping block to be placed into cold chafing dishes. Tzatziki Sauce made of yogurt, cucumber, garlic and other spices is purchased in bulk from wholesale food suppliers and comes in large glass bottles. The workers performing this job would take a bottle from storage, open it up (using their hands) and pour this into a cold chafing dish. The worker might use a common plastic spatula to scrape Tzatziki from the bottle. If there is Tzatziki remaining in the bottle, the lid would be screwed back on (by hand) and placed into a refrigerator. The pita bread comes prepackaged, purchased in bulk from a wholesale bakery. The worker would go to the supply area, pick up a plastic bag of Pita Bread, rip the bag open (typically with their hands) and place the Pita Bread into a hot chafing dish. The worker would take from the supply area a box or boxes of toothpicks, and place into a chafing dish that is neither heated nor cooled. Salad Mix comes prepackaged. Bags would be removed from the cooler, opened (typically by hand) and poured into a cold chafing dish. When an order comes in – either for a gyro, a salad, gyro bowl – the worker would simply assemble the ingredients that is on this internal buffet line using appropriate equipment (tongs, serving ladle, gloved hands), place onto a plate or bowl (as appropriate) and hand to the worker who will be serving the customer directly.
Sausage & Burgers. All the meats come prepackaged. The vegetables are uncooked, and packaged as pre-cut in bite sized pieces. The meat items as well as the vegetables would be placed on a grill to cook, using tongs to place them onto the grill and a turner spatula to move them around the grill. Part of the grill would be at full heat to grill the meat items, part would be kept at medium heat to grill the vegetables, and parts of the grill would be kept at low temperature to hold the meats and vegetables until they are ready to serve to the public.

Perform variety of attending duties at mobile food concession. Arrange tables and decorations according to instructions. Communicate with customers regarding orders. Accept payment from customers. Serve food, beverages or desserts to customers. Prepare daily food items and cook simple foods and beverages using proper safety precautions and safety measures. Clean & organize eating, service, and kitchen areas. Perform cleaning duties to keep equipment and facilities sanatory.
