The employee will use a knife to trim alligator meat from the bones of a previously processed whole alligator carcass – sometimes referred to as a gutted alligator. The alligator carcass remains whole, but has already been skinned, deheaded, and defooted, and cleaned of its guts.
“Cleanup of work site as necessary”. This job duty is included to entail daily cleaning of the worksite. For example, the meat is trimmed and cut on tables using knives which must be cleaned and sanitized daily after use. All tools and surfaces must also be cleaned, maintained to avoid rust, and sanitized daily after use. Due to certain food safety regulations, the facility and equipment used during processing must be cleaned and sanitized in a particular way to ensure safety of our food supply. This duty is just routine cleaning and sanitizing required during processing.

Trimming/Cutting alligator meat. Weighing meat. Pounding meat with tenderizer. Put processed meat in cooler/freezer for storage. Cleanup of work site as necessary
Special Requirements
Must be able to lift 50 lbs.; May be subject to random drug screen upon hire paid for by employer and/or a drug screen paid for by employer if reasonable suspicions arise during employment. This is a drug free work area. Failure of a drug screen will result in termination for cause.
