Job description
Responsible for processing herring roe to produce Kazunoko (Japanese herring roe products) for export to Japan. Sort, salt preserve, brine, season, and process herring roe to produce Kazunoko. Inspect and pack Kazunoko according to grade. Maintain and control quality, uniformity, market acceptance, and the highest price of products. Provide technical expertise in the production process, grading, quality control, and specification.
Special Requirements
Knowledge of processing and grading standards of herring roe for the Japanese market
F.a.5 and 6: Will work 40 regular hours per week with up to 40 hours of overtime per week (every day, from 9:00 am to 11:00 pm, including overtime hours). Actual overtime hours and work schedule depend on fish availability. Work will be performed at 2 land plant locations in Alaska in the following work itinerary: Sitka (329 Katlian St.) from 3/1/2023 to 4/5/2023 and Kodiak (627 Shelikof St.) from 4/6/2023 to 5/31/2023. Both locations are within the same Alaska nonmetropolitan statistical area. The work itinerary is approximate and subject to change depending on fish availability.
