Job description

Work within this job description does not include freezing of fish or work in and around employer's freezer functions. All work within this job description will be performed on fresh fish that are used for in further processing and freezing or that are shipped as "fresh, never frozen" fish. In all duties employees must strictly adhere to all applicable food safety and sanitation requirements, including requirements of USDA Food Safety Inspection Service, Global Aquaculture Alliance's Best Aquaculture Practices, USDA Process Verified Program for US Farm Raised Catfish Sustainability, and requirements of the customers and employer.
Fish Trimmers:
Detach the nugget from the fillet by hand with a trimming knife. Remove the bone from the nugget portion and place nugget into a clean pan. Inspect fillets for any bones or skin and remove them by hand using a fillet knife. Place the fillets into a separate pan. Using a fillet knife, remove the fillet from the backbone of whole, de-headed, skinned fish. Cut fillets into strips or smaller portions using a hand fillet knife . Workers will be responsible for keeping their knives clean by using the sanitation bucket provided by the employer. Workers should come prepared with appropriate clothing and footwear for environmental and working conditions as described and must wear assigned personal protective clothing when required. Workers must keep up with the employer provided apron, knife, and gloves.

Special Requirements

Must be 18 years old or older. Workers should come prepared wearing appropriate clothing and footwear for the environmental and working conditions described. Cell phone can only be used during breaks, emergencies, and communicated with supervisor when needed. Lifting requirement may have a range of 5 - 50 lbs. All tools, supplies and equipment will be provided at no cost to workers. Must be able to work with minimum supervision. Workers should expect periods of little/no work due to weather conditions beyond employers control. Hours and days of work may vary due to weather conditions. Most of the workday is spent in agricultural fields and involves exposure to sun, wind, rain, soil, mud, dust, heat, cold, humid, and other natural elements.
