Job description
The Trimmer will be responsible for trimming imperfections on fish fillets, including removing bones, fins, and skin not removed by fillet machines. The Trimmer will reach 18 inches forward to grab numerous pieces of fish one at a time using the left or right hand. The Trimmer will then take the piece of fish and place it on a 36 inch high table and trim the bones and remove nuggets from the pieces of fish using a work knife. Each finished fillet will be placed into an open slot beside the Trimmer and the trim – leftover skin, bone. etc. - will be placed in a takeaway slot for disposal. The Trimmer must be able to trim approximately 8 fillets per minute making approximately 4 cuts every 7.5 seconds.

The physical demands herein are representative of those that must be met by an employee in order to successfully perform the essential functions of this job.
Physical and Mental/Emotional Requirement: The Trimmer will be required to grip a work knife with their right or left hand without any wrist problems or wrist flexion. Constant wrist flexion and ulna wrist bending are required when cutting with the work knife. The Trimmer must be able to climb up and down at least 4-5 steps to get to and from work area. Reaching above the chest and shoulders is required to toss fish nuggets onto a conveyor belt. The Trimmer must be able to stand for about 2 hours before having a 15 minute break.
Body Mechanics: While trimming it is very important to maintain their wrist in a straight neutral posture and avoid flexion and ulna bending of the wrist. This reduces the contact force on the hand/wrist/finger repetition, wrist postures, and force. All tasks are involved while trimming. Muscle strengthening exercises are performed daily while the Trimmer is in their work area.
Environmental Requirements - Trimmer must be able to work inside the building where temperature is maintained between 55-60 degrees. The atmosphere is damp due to excessive water on the floor to keep the equipment and floor clean. Noise level is minimal. Full smock, hair/beard net, gloves, hearing protection and eye protection must be worn.
